Cucumbers

 
I have a supply of cucumbers in the frig so decided I had to do something with them. My mother used to make these.
I sliced the cucumbers after pealing and sliced one onion in a bowl, Poured all the vinegar I had left on them and it wasn't enough. I dug around in the fridge and found a jar of sweet pickles , one small pickle and lots of juice, then I still didn't have enough vinegar. I discovered a bottle 1/2 full of fancy wine vinegar with garlic. I have no idea why I had it . It has been setting there so long I forgot why I bought the stuff.
I poured all the pickle juice and wine vinegar on top added a little sugar and covered the mixture to soak.
When my daughter came in from work I woke just long enough to hear her say, Good. I knew she was sampling my cucumbers.
Like most of my cooking this is just a make do think. I always cook that way. If I don't have a certain ingredient I just use something else.
It rained here last night and I am sure the farmers were most appreciative for the rain as it has been very dry.
I went to sleep with the sound of sweet rain pithy patting on the roof. Posted by Picasa

Morning Patsy! Boy the chicks have grown! That cochin chicken looks like a buff with an 80's hair-do! Never seen anything so puffed up before. It will be interesting to see how the breeding goes. Your granddaughter was beautiful...glad you had fun & that she's marrying into good family. Always makes a difference.I cant remember what gets on our tomato plants but it puts bad places on them were you cant eat-em. This year we got some disease resistant ones & they look like they might be ok. Time will tell. Your cucumbers look good..sounds like a salad dressing...yum!

The first time I ever had cucumbers fixed like that was when I was a kid in Arkansas. I ate so many I was sick! Thanks for all the great memories you bring back. Carmon

Cooking from what's on hand is a skill, one I once told myself I'd learn by the time I was 60. Your story inspired me to keep on trying. The cucumber dish sounds fresh and light and delicious for a summer lunch.

My grandmother made cucumber salad like this. I've tried to replicate it but I never seem to get the sweet / sour ration "just right." I think it was the love in Grannies' hands that made her salad so good . . .and the rosy effects of sweet memories.

Wish it had rained here. all the grass is dying. Cumumbers sound very good.
