
Daughter brought home 3 boxes of scallop potatoes to be cooked by me for a lunch she was having at work last Saturday. I used 2 boxes and put one away for another day. Today I cooked pork chops and thought I will cook that box of potatoes. I never measure and so I put some water in a bowl and added some margin and powered milk Then I added the packet of cheese and stirred in the dried potatoes. Since this is the 3 day of June I wanted to cook this dish in the microwave to avoid heating the house.
I had put in to much water and what came out of the microwave was something that looked like soup.
What to do? then I remembered Helen telling me about her good friend in Kansas who had a father who was a widow and did his own cooking.
He confided to My sister once if you buy those Jiffy cake mixes and add more water and stir in a cup of flour they go a lot further.
Rheas' father has gone on to his reward after some 90 years on this earth but today in his memory I grabbed a box of instant potato flakes and stirred some into my cheesy soup and presto I have cheese scalloped potatoes that will last longer.

Well, wonder who we get that never measure trait from...I have it too.
i always measure -- because momma never did and it was always iffy what most of her food would tast like.
