Green "Love Apple" Pie
2 9-inch pie crusts
3 cups green tomatoes, chopped into 1/2 inch pieces
1 Tablespoon apple cider vinegar
Toss together and let stand 10-15 minutes.
In another bowl, combine:
2 teaspoons cinnamon
1/2 teaspoon nutmeg
(or your favorite apple pie spices)
1/2 teaspoon salt
1/2 cup white sugar
1/2 cup brown sugar
2 - 5 Tablespoons flour or cornstarch, as necessary for juciness of tomatoes
Combine green tomatoes and dry ingredients, and stir until well distributed. Pour into bottom crust, put top crust on, sprinkle with sugar if desired (I use a combo of sugar and cinnamon), cut vents, and bake at 375 degrees for 40-45 minutes (or until a toothpick inserted in center comes out tacky, not wet)
Wonder if one could freeze it unbaked for later? Or even baked....anyone tried to freeze something like this?
