I have cooked groundhog but only once. Long ago a young man came to visit and he went hunting for squirrels which he didn't find but he brought back a groundhog.
He said they were good so I cooked it by boiling it and made dumplings. It had a taste similar to beef.
The trouble with groundhog is trying to kill it before it runs into his under ground den .
People have said squirrels are too cute to eat and that is true until a person gets hungry enough and then I expect cute goes out the window or in the kettle.
